Marinate meat overnight in the following ingredients:
1 tblsp ginger, 1 tblsp garlic, 1 tsp Arad and 1 ½ tsp salt...
• Fry 3 medium finely sliced onions until nicely browned. Remove from oil. Allow to cool and crush. Add to meat. add one cup yoghurt, 1 tsp whole cumin seeds, pinch of saffron and 2 grated tomatoes, 2 tsp red chillies
• mix well into tomatoes
• Heat quarter cup ghee. add few cinnamon , whole cloves to ghee and braise
• Then add meat. cook over low heat adding water when necessary until done
• takes about two hours
• sprinkle a little elachie powder when done
• half tsp garam masala as well when meat is cooked
Serve with tandoori naan
Can add raw papaya for tenderising
