Rice meals with a difference (15.02.18)

 

MUTTON AKNIE RECIPE

1/2 KG LEG MUTTON WASHED AND COOKED WITH:
1 tsp garlic
1/2 tsp Arad
2 tblsp ginger
1 tsp salt
3 cups water
Cook till mutton soft

MASALA:

2 ONIONS NORMAL VAGAAR WITH WHOLE SLICED GREEN CHILLIES,

WHEN LIGHT BROWN ADD:
1 tsp crushed green chillies
Handful fresh green chopped dhaniya
2 tblsp red masala
2 tsp Dhana
1 tsp Jeeru
1/4 tsp Arad
Salt to taste
Let above braise for 5mins

THEN FURTHER ADD
2 tblsp lemon juice
1 tblsp green chutney
1/3 cup Tom purée
1 tblsp yogurt
Once all braised add about 2 liquidized tomatoes
Let tomatoes cook then add cooked meat to masala, 1 cup rice 1/2 cup water and let it steam
Fry potatoes and add to rice
Garnish with green dhaniya
Enjoy

 

MEMON AKNIE RECIPE

BOIL THE FOLLOWING IN 2 CUPS WATER & KEEP COVERED:
• 2 tsp whole jeeru,
• 5 cardamom pods
• 3 to 4 cloves,
• 3 cinnamon sticks,
• 12 black peppercorns

Soak 2 cups rice in hot water and leave aside.
1 chicken cut into pieces
2 large onions finely chopped,
1 cup oil and 1/4 cup ghee. Braise onions, when onions are pinky gold add your chicken and
1 tblsp ginger paste and
1 tblsp garlic paste,
1 tsp salt,
1 ½ tsp jeeru powder,
1 tsp turmeric.

Let it cook a bit then add 2 grated tomato with 3 tsp paprika and hot chilli powder according to taste, and 2 tsp dhania powder. Add 2 cups maas/sour milk, then add in the the water of the soaked spices with cinnamon sticks and close lid of the pot, this gives it a lovely flavor. Keep pot covered. Add potatoes when chicken is half done. Once potatoes are cooked add in raw rice, add very little water if needed. Put in dhania and big sprig of mint. Mix well and place in oven to cook. Garnish with fresh chopped dhania. Enjoy!!!

 

 

 

 

STEAK RICE RECIPE
2 cups rice
½ kg steak
3 carrots and 3 color peppers
4 baby marrows
4 tblsp sour cream
1 tsp red masala
1 tsp dhana jeero
4 tsp vinegar
1 tsp steak and chops spice
1 tblsp ghee
2 grated tomatoes
2 tblsp tomato sauce
2 tblsp olive oil
Method
Boil rice with pinch of Arad. Stir fry julienne carrots, strips of peppers and marrow cut into rounds in olive oil.
Add salt, white pepper and sour cream
Marinate steak with spices and vinegar and cook in ghee. Add grated tomato and tomato sauce. In a casserole dish layer steak then rice, then vegetables, then steak again and rice.
Bake in oven 180d for 40minutes.
Serve with sour milk
