Samoosa recipes with a difference (28.03.19)

1 kg chicken mince –you can use ready chicken mince, or you can make your own 
1 tablespoon green chilli paste
1 tablespoon garlic
Salt to taste
2 jalapenos slit in the middle
1 bottle JoJo’s bursting jalapeño sauce
½ cup crystal sauce
2 to 3 cups grated Gouda cheese
1 cup mozzarella cheese
½ cup chopped spring onion
Handful finely chopped dhania (coriander)

Add a good amount of oil in the pot followed by the green chillies and garlic, let this sauté until you can smell the flavor, add in the slit jalapenos and the chicken mince using a big dishing out spoon start separating and mixing the mince, add salt and cook on medium heat for 5 minutes. Add in the sauces and cook on low until all the sauce has sunk into the mince and the mince should be completely dry, let this cool down until completely add the cheese, spring onion and dhania (coriander), give it a good mix. This is ready to be filled. 1 kg mince plus cheese should fill approximately 10 to 12 dozen SAMOOSAs depending on the size of your pur



1 kg onions chopped
1 ½ tsp crushed green chillies
Braise in the pot with butter /ghee
2 tsp garlic
When onions are clear in color add in ½ kg frozen sweetcorn
2 tsp fine salt
1 tsp black pepper
1 tsp crushed jeero
Pinch of Arad

Cook until corn is done, and water burns out
Leave to cool completely
When cold add in your cubed cheese (500grams cheese)
Mix well. Before filling samoosas add in ¼ cup mazeina n coat well. Add chopped Dhania. Mix is now ready for filling.

So no more cheese coming out

Use cheddar and mozzarella cheese
Try to cube instead of grating it. If possible…
Squeeze all the water out from the onion and corn

Add 2/3 tablespoons of flour to yr grated cheese and onion as well as a pkt or two crushed lays chips , use spring cheese and cheese n onion Simba – small pktsPulse the corn because if you leave it whole then it’s the same concept as making popcorn. They whole corn kernels pop in the samosa and cause it to burst. Also found with moons, spring rolls and especially cheese and corn samosas, take them out in the morning and spread on a tray/dinner plate lined with paper towel. Keep in the fridge to defrost. Fry them cold, not frozen in hot oil.
