Braise onions in ghee or oil. Grill rum steak and put onions over steak. In a pan put some butter or ghee, cut mushrooms, add salt + pepper and braise until all water is burn out and until semi golden brown in colour. Add 25ml fresh cream or milk. Cook with mushrooms. Add sliced Melrose cheese. Mix through until thick sauce is formed. Pour over grill Rum Steak.
